Creamy Garlic Herb Salmon

🧾 *Ingredients* (2 servings):

– 2 salmon fillets (150–180g each)  

– 1 tbsp olive oil or butter  

– Salt & pepper to taste  

– 2 cups fresh spinach  

– 1 cup mushrooms, sliced  

– 3 cloves garlic, minced  

– 1 cup heavy cream (or light cream)  

– 1 tsp Dijon mustard (optional)  

– 1 tbsp fresh parsley or thyme, chopped  

– Juice of ½ lemon

👨‍🍳 *Instructions:*

1. *Season salmon* with salt and pepper.  

2. *Sear* in hot skillet with oil/butter for 4–5 min per side until golden and cooked through. Remove and set aside.  

3. In the same pan, *sauté garlic* for 30 sec, then add *mushrooms*, cook 2–3 min.  

4. Add *spinach* and stir until wilted.  

5. Pour in *cream*, add Dijon mustard, lemon juice, and herbs. Simmer 2–3 min until slightly thick.  

6. Return salmon to the pan, spoon sauce over it, and cook another 1–2 min.  

7. Serve hot.
