🐟 Savory Garlic Butter Cod with Roasted Potatoes
Ingredients
For the roasted potatoes:
1 ½ lbs baby potatoes (halved)
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt and black pepper, to taste
1 tbsp fresh parsley (chopped)
For the cod:
4 cod fillets (about 6 oz each)
Salt and pepper, to taste
2 tbsp olive oil or butter (for searing)
3 tbsp butter
3 cloves garlic, minced
1 tbsp lemon juice
½ tsp smoked paprika
1 tbsp fresh parsley (chopped)
Lemon wedges, for serving
🔪 Instructions
1. Roast the Potatoes
Preheat oven to 425°F (220°C).
Toss halved potatoes with olive oil, garlic powder, paprika, salt, and pepper.
Spread on a baking sheet in a single layer.
Roast for 25–30 minutes, flipping halfway through, until golden and crispy.
Sprinkle with fresh parsley and set aside.
2. Cook the Cod
Pat cod fillets dry and season both sides with salt, pepper, and smoked paprika.
In a large skillet, heat olive oil or butter over medium-high heat.
Add cod and sear 2–3 minutes per side until lightly golden and just cooked through (fish should flake easily).
Remove cod from skillet and set aside.
3. Make the Garlic Butter Sauce
In the same pan, reduce heat to medium.
Add 3 tbsp butter and melt.
Stir in minced garlic and cook 30 seconds, until fragrant.
Add lemon juice and parsley, stir well.
Return cod to pan, spoon sauce over the top.
4. Serve
Plate the roasted potatoes and top with garlic butter cod.
Garnish with extra parsley and a lemon wedge on the side. 🍋
