Savory Sausage Breakfast Muffins
Ingredients:
1 pound breakfast sausage (mild or spicy)
1 cup shredded cheddar cheese (or a mix of cheddar and mozzarella)
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
½ teaspoon garlic powder (optional)
1 cup milk
2 large eggs
¼ cup melted butter (or oil)
Optional: chopped green onions or bell peppers for extra flavor
Instructions:
Preheat oven to 375°F (190°C). Grease or line a 12-cup muffin pan.
Cook sausage in a skillet over medium heat until browned. Drain and cool slightly.
In a large bowl, whisk together flour, baking powder, salt, and garlic powder.
In another bowl, whisk milk, eggs, and melted butter.
Combine wet and dry ingredients just until moistened (don’t overmix).
Fold in the cooked sausage and shredded cheese (and veggies, if using).
Spoon batter evenly into muffin cups — about ¾ full.
Bake for 20–25 minutes, until golden and a toothpick comes out clean.
Cool slightly before removing from pan. Serve warm or at room temperature.
Tips:
These freeze beautifully! Reheat in the microwave for 30–45 seconds.
Try using crumbled bacon, ham, or chopped spinach for variations.
Add a dash of hot sauce or a sprinkle of parmesan on top for extra flavor.
