🦀 Maryland Crab Cakes Recipe
Why You’ll Love Them
Maryland Crab Cakes are all about the crab — not filler. Each bite is full of sweet, delicate crab meat, held together just enough to stay crisp on the outside and moist inside. Perfect for dinner, sandwiches, or appetizers.
Ingredients
(Makes about 6 crab cakes)
- 1 lb lump crab meat (preferably fresh or refrigerated, not canned)
- 1 large egg, lightly beaten – helps bind the mixture together
- 2 tbsp mayonnaise – keeps the crab cakes moist
- 1 tsp Dijon mustard – adds subtle tang and depth
- 1 tsp Worcestershire sauce – enhances umami flavor
- 1 tsp Old Bay seasoning – the classic Maryland spice mix
- 1 tbsp fresh lemon juice – brightens the flavor
- 1½ tbsp chopped fresh parsley – adds color and freshness
- ¼ cup crushed saltine crackers or breadcrumbs – just enough to hold it together
- Butter or oil for frying
Instructions
- Prepare the Crab Mixture
- In a large bowl, gently combine the crab meat, being careful not to break up the large lumps.
- In a separate small bowl, whisk together the egg, mayonnaise, mustard, Worcestershire sauce, Old Bay, lemon juice, and parsley.
- Pour the wet ingredients over the crab meat. Add the crushed crackers and gently fold until combined.
- The mixture should be moist but hold its shape — adjust with a few more cracker crumbs if needed.
- Shape the Crab Cakes
- Form the mixture into 6 round patties (about ½ cup each).
- Place on a parchment-lined plate and refrigerate for at least 30 minutes to firm up.
- Cook the Crab Cakes
- Heat butter or oil in a skillet over medium heat.
- Cook crab cakes for 3–4 minutes per side, until golden brown and crisp.
- Alternatively, you can bake them at 425°F (220°C) for 12–15 minutes.
- Serve Hot
- Serve with lemon wedges, tartar sauce, or a spicy remoulade.
- Garnish with fresh parsley and enjoy!
Pro Tips
- Use lump crab meat for authentic Maryland texture and flavor.
- Don’t overmix – you want big, meaty chunks in every bite.
- Chill before cooking to prevent falling apart in the pan.
- A sprinkle of extra Old Bay on top before frying adds that perfect Maryland kick.
