🍏 Apple Pie That Melts in Your Mouth
Ingredients
For the crust:

2 ½ cups all-purpose flour
1 cup (2 sticks) cold unsalted butter, cubed
1 tsp salt
1 tbsp sugar
6–8 tbsp ice-cold water

For the filling:

6 medium apples (Granny Smith, Honeycrisp, or a mix), peeled, cored, and thinly sliced
¾ cup granulated sugar
¼ cup brown sugar
2 tbsp all-purpose flour
1 ½ tsp ground cinnamon
¼ tsp ground nutmeg
1 tbsp lemon juice
1 tsp vanilla extract
2 tbsp unsalted butter, cut into small cubes

For the topping:

1 egg (beaten, for brushing)
1 tbsp sugar (for sprinkling)


Instructions


Make the crust:

In a large bowl, whisk together flour, salt, and sugar.
Cut in cold butter with a pastry cutter or fork until mixture resembles coarse crumbs.
Add ice water, 1 tablespoon at a time, until dough just comes together.
Divide dough in half, shape into discs, wrap, and chill for at least 1 hour.



Prepare the filling:

In a large bowl, combine sliced apples, sugars, flour, cinnamon, nutmeg, lemon juice, and vanilla.
Toss well and let sit 15 minutes to draw out the juices.



Assemble the pie:

Preheat oven to 425°F (220°C).
Roll out one dough disc to fit a 9-inch pie plate.
Fill with apple mixture and dot with butter cubes.
Roll out second disc and place on top. Trim and crimp edges to seal.
Cut small slits for steam to escape.
Brush top with beaten egg and sprinkle with sugar.



Bake:

Bake for 20 minutes at 425°F, then reduce heat to 375°F (190°C) and bake for another 35–40 minutes, until golden and bubbling.
If edges brown too quickly, cover with foil.



Cool & Serve:

Let cool at least 2 hours before slicing — this helps the filling set and makes every bite melt in your mouth.
Serve warm with vanilla ice cream or whipped cream.
