🧀 Cheesy Ground Beef and Rice Casserole
Ingredients:
1 lb (450g) ground beef
1 small onion, diced
2 cloves garlic, minced
1 cup long-grain white rice (uncooked)
2 cups beef broth
1 can (10.5 oz) cream of mushroom soup
1 can (10.5 oz) cream of chicken soup
1 cup frozen mixed vegetables (optional)
2 cups shredded cheddar cheese, divided
1 tsp Worcestershire sauce
1 tsp salt
½ tsp black pepper
½ tsp paprika
½ tsp garlic powder
Instructions:
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
Cook the beef:
In a large skillet over medium heat, cook ground beef with diced onion until browned. Drain excess grease. Add minced garlic and cook for 30 seconds.
Combine everything:
Stir in uncooked rice, beef broth, cream of mushroom soup, cream of chicken soup, Worcestershire sauce, seasonings, and mixed vegetables (if using). Mix well.
Bake:
Pour the mixture into the prepared baking dish. Cover tightly with foil and bake for 1 hour, or until the rice is tender.
Add cheese:
Remove foil, stir, and top with 1½ cups of cheddar cheese. Bake uncovered for another 10–15 minutes, until the cheese is melted and bubbly.
Serve:
Sprinkle with a little paprika or parsley for color, and enjoy warm!
💡 Tips:
For extra flavor, use cream of celery soup instead of one of the others.
You can swap in ground turkey or Italian sausage.
