🇬🇷 Greek Baked Cod with Lemon, Garlic & Olives

Ingredients:

  • 1½ lbs (about 700g) cod fillets (fresh or thawed)
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 lemon (zested and juiced)
  • 1 medium red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives, pitted and halved
  • 1 tsp dried oregano
  • ½ tsp dried thyme (or Italian seasoning)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: ¼ cup crumbled feta cheese for topping

Instructions:

  1. Preheat Oven:
    Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
  2. Prepare the Veggies:
    In a large bowl, combine cherry tomatoes, sliced onion, olives, minced garlic, 2 tbsp olive oil, lemon juice, zest, oregano, thyme, salt, and pepper. Toss to coat.
  3. Assemble the Dish:
    Place cod fillets in the baking dish. Drizzle with the remaining 1 tbsp olive oil and a pinch of salt and pepper. Spoon the tomato-olive mixture evenly over the fish.
  4. Bake:
    Bake uncovered for 18–20 minutes, or until the fish flakes easily with a fork and the tomatoes are soft and juicy.
  5. Finish & Serve:
    Sprinkle with fresh parsley (and feta if using). Serve warm with lemon wedges on the side.
