🇬🇷 Greek Baked Cod with Lemon, Garlic & Olives
Ingredients:
- 1½ lbs (about 700g) cod fillets (fresh or thawed)
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 lemon (zested and juiced)
- 1 medium red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- ½ cup Kalamata olives, pitted and halved
- 1 tsp dried oregano
- ½ tsp dried thyme (or Italian seasoning)
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
- Optional: ¼ cup crumbled feta cheese for topping
Instructions:
- Preheat Oven:
Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil. - Prepare the Veggies:
In a large bowl, combine cherry tomatoes, sliced onion, olives, minced garlic, 2 tbsp olive oil, lemon juice, zest, oregano, thyme, salt, and pepper. Toss to coat. - Assemble the Dish:
Place cod fillets in the baking dish. Drizzle with the remaining 1 tbsp olive oil and a pinch of salt and pepper. Spoon the tomato-olive mixture evenly over the fish. - Bake:
Bake uncovered for 18–20 minutes, or until the fish flakes easily with a fork and the tomatoes are soft and juicy. - Finish & Serve:
Sprinkle with fresh parsley (and feta if using). Serve warm with lemon wedges on the side.
