Lemon Garlic Cod with Cherry Tomatoes

🧾 Ingredients:

  • 2 cod fillets (~150g each)
  • 1 cup cherry tomatoes (halved)
  • 2 tbsp olive oil
  • 2 garlic cloves (minced)
  • Juice of 1 lemon
  • ½ tsp chili flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley (chopped)

👨‍🍳 Instructions:

  1. Heat olive oil in a nonstick pan over medium heat.
  2. Add garlic and sauté for 30 sec until fragrant.
  3. Place cod fillets in the pan. Season with salt and pepper. Cook 4–5 min on each side until flaky.
  4. Add cherry tomatoes, lemon juice, and chili flakes.
  5. Let it simmer for 2–3 minutes until tomatoes soften.
  6. Garnish with fresh parsley and serve immediately.
