Ingredients

  • 4 white fish fillets (such as cod, tilapia, haddock, or halibut)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon (half juiced, half sliced)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup kalamata olives, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1 teaspoon dried oregano (or Italian seasoning)
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven:
    Set to 400°F (200°C).
  2. Prepare the pan:
    Lightly grease a baking dish with olive oil or nonstick spray.
  3. Season the fish:
    Place the fish fillets in the dish. Drizzle with olive oil and lemon juice, then season with salt, pepper, and oregano.
  4. Add toppings:
    Scatter cherry tomatoes, olives, red onion, and garlic evenly over the fish. Add lemon slices on top.
  5. Bake:
    Bake uncovered for 15–20 minutes, or until the fish flakes easily with a fork.
  6. Finish and serve:
    Sprinkle with crumbled feta and chopped parsley. Serve warm with rice, couscous, or roasted potatoes.
