
Ingredients:
- 2 slices of bread (thick and crusty)
- 1 cup shrimp (peeled and deveined)
- 1 tablespoon butter
- 1 clove garlic (minced)
- 1 tablespoon chopped parsley
- 1 cup shredded mozzarella or provolone cheese
- 1 tablespoon mayonnaise (optional)
- Salt and pepper to taste
- 1 teaspoon olive oil or butter (for grilling)
Instructions:
- Cook the shrimp:
- In a skillet, melt 1 tbsp butter over medium heat.
- Add garlic and cook for 30 seconds.
- Add shrimp, salt, and pepper.
- Cook until pink (about 2–3 minutes per side).
- Sprinkle with parsley and remove from heat.
- Prepare the sandwich:
- Butter one side of each bread slice.
- Place one slice (butter side down) in a skillet.
- Add a layer of cheese, then the shrimp, then more cheese.
- Top with the second slice of bread (butter side up).
- Grill the sandwich:
- Cook on medium heat until golden brown and crispy (about 2–3 minutes per side).
- Press lightly with a spatula so the cheese melts evenly.
- Serve hot:
- Cut in half, sprinkle with parsley, and enjoy the cheesy shrimp goodness!
