Garlic Butter Shrimp Grilled Cheese Sandwich

Ingredients:

  • 2 slices of bread (thick and crusty)
  • 1 cup shrimp (peeled and deveined)
  • 1 tablespoon butter
  • 1 clove garlic (minced)
  • 1 tablespoon chopped parsley
  • 1 cup shredded mozzarella or provolone cheese
  • 1 tablespoon mayonnaise (optional)
  • Salt and pepper to taste
  • 1 teaspoon olive oil or butter (for grilling)

Instructions:

  1. Cook the shrimp:
    • In a skillet, melt 1 tbsp butter over medium heat.
    • Add garlic and cook for 30 seconds.
    • Add shrimp, salt, and pepper.
    • Cook until pink (about 2–3 minutes per side).
    • Sprinkle with parsley and remove from heat.
  2. Prepare the sandwich:
    • Butter one side of each bread slice.
    • Place one slice (butter side down) in a skillet.
    • Add a layer of cheese, then the shrimp, then more cheese.
    • Top with the second slice of bread (butter side up).
  3. Grill the sandwich:
    • Cook on medium heat until golden brown and crispy (about 2–3 minutes per side).
    • Press lightly with a spatula so the cheese melts evenly.
  4. Serve hot:
    • Cut in half, sprinkle with parsley, and enjoy the cheesy shrimp goodness!
