Three-Generation Cabbage Soup
Prep time: 15 mins | Cook time: 30 mins | Servings: 6-8
A hearty, comforting meal that tastes just like traditional cabbage rolls without all the rolling! This recipe has been a family favorite for decades.
Ingredients
- 1 lb Lean Ground Beef
- 1 Medium Green Cabbage, chopped
- 1 Large Onion, diced
- 3 Cloves Garlic, minced
- 2 Large Carrots, diced
- 2 cans (14.5 oz) Diced Tomatoes
- 1 can (8 oz) Tomato Sauce
- 6 cups Beef Broth
- 2 tbsp Brown Sugar
- 1 tbsp Worcestershire Sauce
- 1 tsp Italian Seasoning
- Salt and Pepper to taste
Instructions
- Brown the Meat: In a large pot, brown the ground beef over medium-high heat. Drain excess fat.
- Sauté: Add onion, carrots, and garlic. Cook for 5 minutes until softened.
- Combine: Stir in diced tomatoes, tomato sauce, beef broth, brown sugar, and seasonings. Bring to a boil.
- Simmer: Add the cabbage. Reduce heat, cover, and simmer for 25 minutes until the cabbage is tender.
Pro Tip: Add a cup of cooked white rice at the very end to make it a truly “unstuffed” cabbage roll experience!
